Vegan Spiced Apple Muffins

This vegan recipe is a great way to enjoy your favourite Autumnal flavours in a muffin!


INGREDIENTS


  • 220g plain flour
  • 2 1/2 tsp baking powder
  • 1/4 tsp salt
  • 100g caster sugar
  • 75 ml vegetable oil
  • 240ml plant milk (we like oat milk)
  • 4 drops Cinnamon Spice Drops
  • 2 drops Chai Spice Drops
  • 5-7 chopped dates
  • 150-200g diced apples
  • 75g chopped pecans or walnuts (optional)


Method of Preparation:


  • Preheat the oven to 180°C.
  • Line 12 muffin tins with paper or silicone liners.
  • Mix the flour, baking powder, salt, and sugar together in a large bowl.
  • Mix the oil, milk and Spice Drops in another bowl.
  • Add the wet ingredients slowly into the dry and mix until combined but don’t overmix.
  • Fold in the apples, dates and nuts.
  • Fill each muffin lined to about 2/3 full.
  • Bake for 30-35 minutes.
  • Cool and enjoy with a nice cup of chai tea.
