This is a rich, tomato-red chilli salsa. It is sweet and tangy, delicious with anything barbecued or use with nachos or with a burrito.
INGREDIENTS
- 2 tbsp olive oil
- 1 onion, finely chopped
- 1 x 400g tin chopped tomatoes
- 2 tbsp brown sugar
- 4 drops Cumin Seed Spice Drops®
- 10-12 drops Garlic Spice Drops®
- 2 drops Cinnamon Spice Drops®
- 2 drops Clove Spice Drops®
- 6-8 drops Red Chilli Spice Drops®
- Juice of 1/2 lemon
- 1/4 tsp salt
- lemon rind strips, to garnish
METHOD
- Heat the oil on medium heat and add the onion and cook until soft.
- Tip in the tomatoes and sugar and cook on medium heat for 5 minutes. Stir occasionally until the mixture is thickened.
- Add in all the Spice Drops®, lemon juice and salt and stir until evenly mixed.
- Turn off the heat and leave to cool.
- Serve garnished with the lemon rinds.
