  1. *Ginger syrup – heat 1 cup sugar to 1 cup water and 2 tablespoons of grated fresh ginger. Stir till dissolved, strain and use.
  2. Shake with ice
  3. Double strain and pour over large ice (for the effect). Garnish with prawns and coriander.


This drink has all the elements of sweet, sour, spicy and umami. There are various cocktails inspired by Tom Yum, the famous Thai sour and spicy soup, but non are non-alcoholic. In order to give the drink an element of umami and improve texture and mouthfeel, I used fish sauce which completes the drink. If you don’t have fish sauce, you can substitute with soy sauce but it gives a slightly different taste.
